Food with My Dude #21: Huli Huli Chicken Rice Bowl

Stephen and I purchased this meal whenever we purchased the Pork Shumai Home Chef meal kit in November. Huli Huli Chicken sounded pretty good to us; plus, it was super easy to prepare!

Grilled/cooked pineapple is just so good; I don’t know why I don’t make it more often.

Ingredients:

  • 2 Green Onions
  • ¾ cup Jasmine Rice
  • 1 Lime
  • 4 oz. Slaw Mix
  • 0.84 oz. Mayonnaise
  • 13 oz. Boneless Skinless Chicken Breasts
  • 4 Pineapple Rings
  • 2 oz. Teriyaki Glaze
  • ¼ tsp. Red Pepper Flakes

This was a pretty filling meal. There are hardly ever any leftovers with these meals, as expected, but I thought this was priced decently for the amount and quality.

I’m at mixed feelings with the slaw mix, but I do have to say, it has grown on me more and more since having it in previous meal kits.

Besides putting the rice on the stove to cook, we’ll prep the slaw. If you look at the ingredients picture, the green onions were looking pretty pitiful already, and we made the meal probably a day after purchasing the box. We always have them on hand, so we were prepared.

First thing’s first: cut up the onions and half the lime.

Then, combine in a bowl:

  • 1 tsp of lime juice
  • mayonnaise
  • 1 tsp of olive oil
  • most of the green onions [leave some for garnish]
  • salt and pepper

I just squirted however much lime juice without measuring. I don’t think it makes that much of a difference.

Next: on to cook the pineapple! Before cooking, you have to pat the pineapple slices dry before cooking it in the pan with 2 tsp. of olive oil. That seems like a lot of oil, but what do I know?

I let them cook for 2-4 minutes, as per the instructions.

Then, I set the pineapple slices to the side so I can cook the chicken. After removing the pineapple, cut the rings into halves.

The chicken breasts were super thick, so I kind of wished that I would’ve cut them up into strips first because they took longer to cook, and I couldn’t tell if they were all the way done unless I cut into them.

I mean, they’re pretty thick, so hard to judge the cook time on them, personally as a rookie. Am I allowed to graduate from that stage yet? I think I’m acquiring more difficult skills, somewhat, so maybe I’l give myself more credit.

Once the chicken is finished, fill up your plate with the rice as the base, then the cole slaw mixture, pineapple slices on one side, and then the chicken!

Lastly, drizzle the yummy teriyaki sauce over your plate, then garnish with red pepper flakes and green onions.

I don’t know what happened with that plate, so I took it, and it tasted super good.

Taste: I really liked this dish and the simplicity of it. The teriyaki sauce wasn’t too sweet and the pineapple was a delicious addition! I should probably order this at restaurants because I liked it a lot better than I thought I would.

I could go for a tad bit spicier, which I could’ve added more spice to mine, but I think the dish overall was pretty successful.

Would I recommend the Home Chef Huli Huli Chicken Rice Bowl?

While I think the price is a tad bit high, I would probably try to mimic this meal again with buying the ingredients, since they would cost less for more of what you get. For the easiness of preparation, I would recommend it for sure. I love the mix of the pineapple and teriyaki taste! Just a lovely combo. I would say to make sure that you have green onions at home in case yours are shriveled up in the box.

  3. I love love love pineapple in savory dishes– especially fried rice & curry.

    That’s interesting that they’ve had you make the same slaw for different recipes. I think Home Chef could be a little more creative than that lol.

    After we tried nearly all the meal sub boxes, boyfriend became a pro & you will get there soon, too! You def have enough skills to graduate from a rookie already. 😊 We may have to buy these ingredients & try this one– looks delish! Thanks for sharing!

    1. I’ve never tried pineapples with curry, but oh man, that sounds like a great combo! You all cook so many different things, I don’t know how you do it! It is strange that they’d pair the slaw with this one, but I think its taste complemented with the chicken and pineapples pretty well. I hope you all enjoy it if you give it a try! 🙂
